Dear colleagues, unfortunately I do not have a photo of my Eggplants Boqierons, because they finished quite quickly🤭😍 so I am going to give you the recipe and you can send me a photo making yours and we will put it on our Instagram. Let's play a good time!

INGREDIENTS:
🌱- 4 Eggplants (necessary quantity).
🌱- 2 handfuls of parsley (necessary quantity).
🌱- Use garlic cloves (necessary amount).
🌱- 4 tablespoons of ground chili pepper.
🌱- 2 cups of apple cider vinegar and 1 cup of water.
🌱- 1 Lemon
🌱- Pepper.
🌱- Sea salt.
🌱- Olive oil.
PROCESS:
💚Wash the vegetables and then bring the vinegar and water to a boil, with a pinch of salt.
In a separate bowl, grate the lemon and then make the juice. Leave mashing for a while.
Chop the parsley, garlic and mix them in a bowl with the ground chili, the zest and the lemon juice that we let mash.
💚 Cut the aubergines into medium sticks and cook them in several batches, which you will place little by little for 1 minute in the saucepan with the water and vinegar that we said is already boiling, you take them out and put them as they are done as the French fries, but with the vinegar and boiling water.
💚 Another simpler way to cook them is as soon as the boil breaks, we place them for 10 minutes, turn off the heat and let them rest for 5 minutes. Then to the jar.
Drain them and put them in a jar with a little mixture of the seasonings, pepper, salt and cover them with oil.
